Wild Rice and Creamed Spinach

Ingredients

1 cup uncooked long-grain brown rice

2 cups Vegetable Stock (page 97)

1 tablespoon cold-pressed virgin olive oil

1/2 cup cooked wild rice

1/2 cup chopped onions

1 cup sliced celery

1 cup sliced mushrooms

2 teaspoons chopped fresh thyme

1 cup torn spinach

1/2 cup unsweetened soy rice or coconut milk

1 pinch sea salt

Description

Directions

Cook the long-grain rice in the stock and drain.

Heat the oil and sauté both types of rice with the onions, celery, mushrooms and thyme, until the onions are clear.

Combine the spinach, milk and salt in a blender and purée.

Pour this over the rice mixture and serve with a fresh salad of your choice.
